Mixed fermentation more tart than sour, made using some yeast harvested from the 2020/2021 New Year Lambic Style. A dose of US-05 yeast cleaned up the remaining sugars, which seems a little back to front fermentation wise. Rested on lemon peel, mainly zest.
This is beautifully drinkable and a good starter for those wanting an intro to the world of sours.
